In a dutch oven or medium pot, attach thermometer to the side of the pot. Pour in 2-3 inches of oil, heat on high until temperature reaches 365 degrees.
While the oil is heating, in a bow mix together pancake mix, cocoa, powdered sugar, red food coloring and water (amount as per pancake mix direction). Whisk until combined well.
Once oil is heated to 365 degrees, take one oreo cookie at a time and dip in the batter until fully coated. I recommend grabbing the oreo cookie on it’s side as you let the excess batter drip in the bowl before dropping in the oil. If you grab from the top/bottom you may leave finger prints.
I recommend frying 5 cookies at a time. They are ready once they puff up and are crisp, turn only once. They will only cook for 2-3 minutes total.
Once done, immediately remove and place on a plate lined with a paper towel to drain the excess oil. Let sit for 3-5 minutes, dust with powdered sugar and enjoy!
