Blender Muffins!

Blender muffins are always fun to make, not just because they are quick and easy, but because they leave almost no dishes to clean up!

Additionally, you don’t have to worry about wet ingredients and dry ingredients, just throw it all together, blend and bake.

Since I had a bunch of bananas that ripened, I decided to chop up a couple and place them in the freezer for smoothies, and the other two I decided to use in these blender muffins. I hate when I have to throw away food, but being able to repurpose is such a win-win, and in this case, so yummy.

These are also great to make and freeze.

Instructions
  1. In a blender combine all ingredients (except chocolate chips). Blend until well mixed, then stir in the chocolate chips
  2. In a cupcake pan, add liners, and pour in the batter 3/4 full (to allow for rise)
  3. Bake at 350 degrees for 20 minutes
  4. Once done, remove from the pan and let cool
