Horchata Cookies!

Love me a lot-a Horchata!

I’ve always loved Horchata, and recently tried Horchata Cupcakes…and OMG delicious! So, I had to try and make Horchata cookies! These are moist, soft, and filled with horchata and cinnamon spice amazing-ness!

Pre-heat your oven to 350 degrees

Cream together:
1/4 cup sugar
3/4 cup brown sugar
3/4 cup unsalted butter

Then add & mix in:
1 tsp Horchata extract
1 tsp Vanilla extract
1/4 tsp nutmeg
2 eggs

Once mixed, add in & mix:
1 tsp baking soda
2 1/3 cups flour

Ok, now you have your dough. It’s thick, and that’s ok! Using a cookie scoop, start to scoop dough and drop it in your hands, do a quick roll, then drop it in your cinnamon/sugar mixture to coat, one more quick roll to dust off the excess, then on to the sheet!
Cinnamon/Sugar Mixture
1/4 cup powdered/confectioners’ sugar
1/2 tsp cinnamon
I typically like to bake cookies on a baking sheet lined with parchment paper. Once a full dozen cookie balls is placed, take the bottom of a measuring cup and gently push down, cookies will be about a half an inch thick.
Bake @ 350 for 10 minutes!
Warning…the house will smell delicious!
