The Makings of A Delicious Salad!

I am typically only a fan of salads if the dressing is bomb and the salad has lots of good stuff in it! When those two requirements come together, I’m in love!

Also, salads should never be boring, because you can always add new ingredients or mix it up, change the dressing, etc. You know, keep things interesting

Rule #1 for an amazing salad- NO store bought dressing allowed! Homemade only 🙂

This dressing is light, has a hint of sweetness, rounded off with a little tang!

Honey Lime Vinaigrette

1/4 cup olive oil
1/4 cup grapeseed oil
1/4 cup (or a couple limes freshly squeezed)
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon kosher salt
1 tablespoon honey

In a small bowl, whisk everything together except the oils. Once mixed well, then slowly add each oil. I do the pour & whisk, get a nice thin stream going and whisk away, then get the next oil and do the same, until all combined. You’ll start to see it thicken slightly, and finito! Put it in the fridge while you prepare your salad.

Salad Ingredients:

Rinsed & Chopped Romaine Lettuce
Chopped Green Onions
Chopped Red Bell Pepper
Shredded Mozzarella Cheese
Toasted Sunflower Seeds **
Diced Avocado
Tortilla Strips

**I noticed that the sunflower seeds I had bought were raw, so I took a handful, tossed them in my small fry pan w/ a little drizzle of grapeseed oil and a pinch of sea salt, and with the burner on low/medium heat, toasted them for a few minutes. This is so yummy and really brings out the nuttiness flavor and scent. Plus, sea salt on anything, and I’m in.

Also, I didn’t measure anything, so add your salad ingredients as you wish. I just always strive to have a good balance so that you don’t have one flavor overpowering the others.

Lastly, I like to make sure that salad’s satisfy my hunger (or else I’m looking for cookies later), so I cooked up a turkey burger on the grill. Let it cool, then cut it into pieces and tossed it in….so good!
