I’m not really a pie person, but let me tell you, I can get down with Taco Pie!
I came across this idea on Pinterest, and thought, I need to make this! So, tonight, I made this after work, and it was so easy. We Loved It!
1 lb organic ground beef
1 can organic black beans (rinsed and drained)
2 10″ flour tortillas
1 cup shredded cheese
Salsa of your choice
1/2 roma tomato (diced)
chopped green onion
Pre-heat your oven to 375 degrees
First, saute your beef, I start with a couple cubes of Sofrito for seasoning, but you can use any taco seasoning. I also add a few dashes of garlic and onion powder. Cook until meat is browned.
Place the 1st tortilla at the bottom of pie pan (or round baking dish like I used)
Start with beans as the first layer.
Add your cooked beef as the second layer (I drained the excess fat before layering, so that the tortilla wouldn’t get soggy)
Place the 2nd tortilla on top, press it down slightly, and bake in the oven for 12 minutes.
After the 12 minutes, you will see the tortilla start to brown and crisp
Remove from the oven, and next add a layer of salsa, then the shredded cheese, diced tomato and green onion
Bake for another 5 minutes, and done! I suggest you let it rest/cool for five minutes.
I cut into 4 quarters, but you easily can cut into 8 pieces.
Feel free to add avocado, hot sauce, etc.
