I came across this recipe on tiphero, and had to try it! Although, I modified it slightly… such an easy, quick, and healthy weeknight meal!

Makes 4 bowls
2 heads of cauliflower florets (blended in a food processor) – set aside
1/2 onion chopped
1 1/2 cup frozen organic peas & carrots
3 lightly beaten eggs
3 tbsp. soy sauce (I use organic)
First, heat 2 tbsp. olive oil in a sauté pan
add in onion
add peas & carrots – sauté for a few minutes until your onions, and peas/carrots have softened
then, move the carrots/peas/onion mixture to the side, and add in the slightly beaten eggs until scrambled. Then, you can mix all together
Then, add in the cauliflower and stir well
Add in each tablespoon of soy sauce, stirring after each.
Transfer to a bowl & top off with green onion…so good!
