TACO TUESDAY! I am a big fan of using my crockpot! and these tacos are AMAZING!
What you’ll need…
6 boneless skinless organic chicken breasts
2 cans Rotel “diced tomatoes w/ green chiles”
shredded cheese – optional
green onions – optional
avocado – optional
hot sauce – optional
Seasonings – since most taco seasoning packets are more filled with preservatives, thickening agents, and names I cannot pronouce, I like to season myself!
How to make them…
I first pour in one can of Rotel, to line the bottom of the pot w/ juice, I then lay the chicken breasts on top, and add in the 2nd can (juices and all)
Then, I start dashing the chicken with sea salt, garlic powder, chili powder, black pepper, and onion powder.
Place your lid on, and cook on high for 3 hours. After the 3 hours, I lift the lid and shred the chicken into pieces like below. Technically you can eat at this point, but I like to let the chicken marinate in the juices for another hour. So, I then cover again, and switch the crock pot on low and let it cook for another hour.
For the tacos, I remove some of the chicken and place it in a sauté pan on the stove (however much you’ll need). I like to brown the meat a little bit and shred it further.
With a another pan on medium, I quickly heat up the corn tortillas, flipping them a few times…they heat up quickly!
I love my taco holder (thanks to Amazon!) I then transfer my tortillas to the holder, add in the chicken, and add your toppings as you like!
For ours, I squeeze fresh lime juice onto the chicken before adding the cheese, green onions, and avocado…buen provecho!!
