Carne Molida, theWhole30 style!

Carne Molida

Grass Fed Ground Beef (1 lb)
Sofrito
Organic Tomato Paste
Salt (3-4 dashes)
Garlic (2-3 dashes)
Annatto (teaspoon)

Carrots – 6-7 baby carrots
Red potatoes – 3-4 baby potatoes

Romaine Lettuce Hearts (washed & dried)

In a pan w/ a lid, brown your beef (no oil needed), as it starts to brown, add in 2 tablespoons of sofrito…and quickly your house smells amazing!

Then season with salt, garlic powder, and annatto (sazon, while a staple in puerto rican dishes, unfortunately has MSG, so I use ground annatto seeds for the beautiful color)

Once you meat is almost cooked & now seasoned, add in 2 tablespoons of tomato paste (if you don’t have paste, you can use tomato sauce, then stir.

While the meat is cooking, I dice my carrots & red potatoes (the smaller you dice, the quicker they will cook).

Throw your potatoes & carrots into the pot, stir well, and cover for 20-25 minutes.

All done!

Scoop onto your hearts & serve!
