2 eggs (separated)
1/2 cup + 6 tbsp. buttermilk
4 tbsp (or 1/2 a stick) unsalted butter, melted
1/4 tsp vanilla extract
1/2 cup + 6 tbsp. all purpose flour
1/2 tsp + 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp + 2 tsp sugar
You will need 3 bowls for this recipe
First, separate your eggs, with the whites in a small bowl, and the yolks in a medium size bowl.
In the bowl with the yolks, whisk together with the butter, buttermilk, and vanilla extract.
In a large bowl, sift together the flour, sugar, baking soda, salt, and baking powder
Then, add the milk mixture to the flour mixture and whisk until the batter is smooth
Now, going back to your small bowl with the egg whites, take an electric hand mixture and blend until white, fluffy, and the whites for stiff peaks. Then, fold in the whites into the batter gentle, just until combined.
I have an All-Clad waffle maker, and I set it to level 3 for these waffles.
With a ladle, scoop 2/3 cups full and pour onto the preheated griddle. 4-5 minutes of cook time, yields beautifully golden waffles!
I love to top them off with a couple dashes of cinnamon & agave syrup!
Makes 4 waffles (7 1/2 inch) – the above recipe has already been cut in half. If you are cooking breakfast for more than 2 people, you can double it for 8 waffles.
