The first time I tried Shishito Peppers was in a restaurant, and I fell in love! I’ve always wanted to try them at home.
So, I made a trip to Whole Foods, but my trip resulted in buying a basket of Padrón peppers, they are slighter shorter in length, but equally delicious and you can cook both peppers in the sam way!
Cook time – 10-15 minutes
These are so easy!
1 basket of padrón or shishito peppers
1 tbsp olive oil
In a saute pan, heat olive oil on medium heat (not high), once heated toss in the peppers and stir to coat in the oil.
Stir every couple minutes, they will start to blister, and that’s exactly what you want!
After about 5 minutes, sprinkle a couple pinches of sea salt over the peppers and stir again.
The peppers take about 10-15 minutes to fully cook. Just keep an eye on them, I pulled these at the 12 minute mark.
Sprinkle again with a pinch of sea salt, you can also add a splash of fresh lemon juice (if you’d like) and serve immediately!
Side note: most of these peppers are not particularily spicy, but with both padrón & shishito peppers, a spicy one can sneak up on you! 🙂
