Flavorful, Hearty and Easy Dish!
red potatoes – 6 small-medium size
1 1/2 red bell pepper
3 tbsp olive oil
red pepper flakes
When I get home from work, I never have the patience to wait for potatoes to bake, so I opt for boiling my potatoes.
I throw washed potatoes into my pot covering them with hot water, about an 1″ over the potatoes. Bring them to a boil, and let them cook for 10-15 minutes or until you can pierce them with a fork fairly easy. Don’t over cook them, or they will get too mushy and they will fall apart when you are tossing them with olive oil & seasonings.
I then start pre-heating my oven, 400 degrees
To save time, while the potatoes are boiling, wash and cut the bell peppers, and cut the sausage.
I dice the peppers about 1/2″ thick, I don’t like to dice them too small, just so that everything bakes at an even rate.
As for the sausage, I buy pre fully cooked links, they usually come 4 links to a pack, and I slice them 1/4″ thick.
Once the potatoes are done, I place a paper towel on a paper plate, carefully take the potatoes out of the water, and let them dry/cool on the plate. I usually wait at least 5 minutes, mainly because I want to be able to dice them without burning my fingers 🙂
(For this meal, I boiled 10 potatoes, but only used 6 (because I like to have a few pre-cooked potatoes on hand to use for a breakfast egg scramble, and that will cut down on my morning breakfast prep time))
Now that everything is chopped…I then throw the potatoes and peppers into a mixing bowl. I drizzle 2 tablespoons of olive oil while stirring/mixing everything together
I don’t have exact measurements for the seasonings, because it’s really your preference.
Once coated, I do a couple shakes of each garlic powder, kosher or sea salt, and parsley (I like a little green). I then stir it up and repeat the shakes once more.
(You can play around with this, because over the years, I’ve used black pepper, red pepper flaxes, onion powder, Italian seasoning mix, etc.) You can’t go wrong!
I then add in the sausage, I do this last, because I feel that sausage is already seasoned, and I don’t want to over do it. Once I add in the sausage, I then drizzle one more tablespoon of olive oil, stir once and done!
By this point, your oven is ready…take a cookie/baking sheet, and throw the mix on there! Since I’ve already coated the mix with olive oil, I do not spray the pan (your choice)
Bake for 15-20 minutes, and I usually open the oven when it’s 1/2 way done and toss the mix. I don’t pull the pan out, but while wearing an oven hit, just use a spoon a gently mix it around really quick.
Once it’s done, take it out, let it sit for 5 minutes and time to eat!
(optional – sometimes, If I only season the mix with garlic powder and red pepper flaxes or parsley, when I get everything on the pan, I’ll sprinkle parmesean cheese on the top. Adds your salt element and tastes amazing
